I find it appropriate to begin at the beginning. For me, the beginning was with this recipe. My husband loves my oven baked potatoes. He loves them so much that we started to call them Daddy's favorite potatoes instead of oven-baked potatoes. The problem with Daddy's favorite potatoes is that they stick to the pan! Horribly! Any time my husband asked me to make his favorite potatoes I would ask him in return if he would scrub the pan. As a result we didn't eat Daddy's favorite potatoes very often. {enter Demarle at Home flexipan}
When I was introduced to Demarle at Home my husband was out of town working. When I told him over the phone that I wanted to join his response was 'ok, whatever you want'. When he got home I decided to give my new flexipans the ultimate test: Daddy's Favorite Potatoes. When it was time to gather at the dinner table I brought him over, picked up my flexipan full of potatoes, poured the entire contents into a serving dish, and presented the now empty flexipan to my husband. He looked at me with a grin on his face and said "That just paid for your pan".
Daddy's favorite Potatoes
tools: knife, cutting board, perforated baking sheet, flexipan mold or deep flexipat
Ingredients
6-7 medium potatoes (I use russet, but red potatoes also work well)
Olive Oil
Onion soup mix (I use Lipton, personal preference)
(optional diced red onion or diced green onion)
Preheat oven to 375*. Wash potatoes and dice into 3/4 inch cubes and put them directly into flexipan. Add enough olive oil to ligtly coat all of the potatoes when stired. Last, stir in the onion soup mix. When well blended put in preheated oven for 45-60 min. depending on 'doneness' desired.
Notes: If making a large batch (7-9 potatoes) you can add some beef boullion for extra flavor. I usually only add diced red onion or green onion when I have some in the fridge that needs to be used up. I love to make this recipe with meatloaf because it takes about the same amount of time in the oven.
